So yes it can be done, but no its not straightforward. Once you got Linux running though, SBS works perfectly fine, i've got it running on mine without any issues. Apparently this is also the reason why Debian's ARM distribution does not officially support the Dockstar. A full-blown Linux can be run on it ( tutorial) but the bootloader needs to be tweaked and chances are you brick the device if something goes wrong. Dockstar is essentially a Sheevaplug with 128MB RAM, no real-time clock, and an added 4-port usb hub ( comparison).
